Ok. This week has been SO busy! The last thing i wanted to do tonight was come home, exhausted, and make some crazy complicated dinner.

So, i made my go-to, healthy, (semi) quick meal that saves me every time.

As long as your spice rack is stocked, all you gotta do is...

Stop by the grocery store on your way home, and pick up some fresh salmon, a lemon, a bag of light, ready to mix, caesar salad, and some cherry tomatoes.

Then, the prep:
-Preheat the oven to 400 degrees.

-Place the salmon, skin side down in a 13x9-inch baking dish, coated with cooking spray.

-Spread some minced, bottled garlic over the salmon, and season with the following ingredients to your liking: salt, ground ginger, garlic powder, ground red pepper, cumin, black pepper.

-Slice the lemon in half, length-wise. With one half, squeeze the juice over the salmon. Cut the other half into slices and place over the salmon.

-Cover in foil, and bake at 400 degrees for 20 minutes.

-The prep for this takes me 5 minutes.

While it’s baking, i toss the salad with the tomatoes, and, wallah! Dinner’s served.

So easy. So fast. So good for you.

Enjoy!
