Ok, I think it’s gotta have something to do with the fact that, waking up, it’s cold and snowy, but by the afternoon, it’s warm and sunny. The crazy climate’s throwing my system outta whack.

So, I did what i always do when I start to feel like I’m getting the crud. SOUP!

It’s not some complicated, gourmet recipe. I just eye-ball the ingredients, and tweak it ‘til it’s perfect.

Here’s what you need:

rotisserie chicken
1 can of cannellini beans
a big thing of low-sodium chic. broth
canned bottle of roasted red pepper strips
rosemary
salt & pepper
red pepper
spinach
(lots of) garlic

Then, after taking the skin off the chicken, I put all the ingredients (except the spinach) in a big pot, bring it to a boil, then simmer for a while. (i’m a firm believer that the longer soup sits, the better it tastes, so i’ll let it simmer for an hour or two)

When I’m about 20 mins from wanting to eat it, I’ll grab a bag of spinach, and tear it into little pieces, and add it to the soup.

That’s it. You can season to taste it, so it’s just right for you, but, it’s so fast, doesn’t require a lot of babysitting, and always helps me feel better.
