Kung Pao Chicken
(Total time: 30 minutes)
If you want to save even more time, buy bagged, pre-washed broccoli, and rotisserie chicken. Skin the rotisserie ahead of time, microwave the broccoli. Then, combine all remaining ingredients, pour over combined chicken & broccoli in large pan, and heat. Finish with chopped peanuts.
Serve over brown rice.
1 Tbs canola oil, divided
4 cups broccoli florets
1 Tbs ground fresh ginger (divided)
2 Tbs water
1/2tsp crushed red pepper
1 pound skinless, boneless chicken breasts, cut into 1/4-inch strips
1/2 cup fat-free, less-sodium chicken broth
2 Tbs hoisin sauce
2 Tbs low-sodium soy sauce
1 tsp cornstarch
4 garlic cloves, minced
2 Tbs coarsely chopped salted peanuts
Yield: 4 servings
This woman was bravely facing down the moments right before her double mastectomy. But, instead of being put under quietly and sadly, she decided to throw a pre-surgery dance party with her doctors and nurses. And they did!
On her Caring Bridge Page, she asked her friends and family to youtube the song she's dancing to, and photograph or film themselves throwing a little dance party in their kitchens, cars, wherever they might be, with the hopes of putting together a healing video montage for people.
This woman's spirit is incredible.
