Perfect Brisket SUBMITTED BY: Unknown
INGREDIENTS 4-5 pound # beef brisket 1T of your favorite seasoning blend…thyme, tarragon, paprika, etc 2T grapeseed oil 2 cups sliced mushrooms 2 cups mixed diced rutabaga, celery, carrot, onion, leek, etc 5 garlic cloves , whole 1 cup tomato puree 1 bay leaf 1t peppercorns 2 cups beef stock 1 cup dry red wine
DIRECTIONS Heat a large oven proof roasting pan over high heat and add the oil.
Brown the beef.
Remove meat from pan.
Add the vegetables, garlic, herbs, spices… cooking until nicely colored.
When glassy, add the wine, stock and tomato
Bring to a boil.
Add the meat back to the pan.
Push vegetables to the sides of the roast.
The top of the roast should 'crown' out of the braising liquid.
Place a 5 inch square of foil on top of exposed meat.
Place pan in a 300 degree oven for 4 and ˝ to 5 hours.
Remove meat from pan.
Place pan on stove top, bring to a simmer and reduce by about half, until sauce consistency is reached.
season and serve with the gravy
