Lee's Roasted Butternut Squash

DIRECTIONS
Preheat oven to 400 degrees.

Coat a nonstick baking sheet with cooking spray.

Arrange 4 cups (1/2 inch) diced butternut squash in a single layer on a pan, sprinkle with salt, ground cinnamon and 1/4 teaspoon nutmeg.

Coat squash with cooking spray. Bake at 400 degrees for 10 minutes, turn with a spatula. Bake an additional 10 minutes or until squash is soft and begins to brown.

By the way....I put the Butternut Squash in the oven at about 350 for a half hour so it's easier to cut. Just don't cook it too long or it will get too mushy for the diced cubes.
