Jalapeno Chicken Wraps SUBMITTED BY: Emily DeBroux
INGREDIENTS 1 boneless, skinless chicken breast 1 garlic clove 1 T onion powder 1 T coarse ground pepper 2 t salt 1 t paprika 1 sm onion sliced 15 jalapenos halved and seeded 1 # bacon sliced in half Chunky blue cheese dressing
DIRECTIONS Cut chicken in 2 x 1/2 " slices, combine spices and chicken.
Put chicken and onion in jalapenos. Wrap bacon around jalapeno and secure with toothpick.
Broil 18-20 min.
Serve with a good chunky blue cheese dressing.
For those who don't like meat and something a little more mild:
INGREDIENTS 1 8 oz package of cream cheese 1/2 c grated cheddar cheese 1/2 c monterey Jack cheese Salt and pepper to taste Paprika 15-20 jalapenos 1 # bacon sliced in half.
DIRECTIONS Cut the jalapenos in half and remove seeds.
Mix the cheeses and spices together.
Spoon into the jalapeno slices. Wrap bacon around and secure with toothpick.
Broil approximately 18-20 min (or until bacon is done).
You sometimes have to turn them if you want the bacon done evenly on both sides. It all depends on your oven.
Serve with a good chunky blue cheese.
With both of these recipes, a lot depends on how much filling you like in the jalapenos. I experiement a lot with this reciped. One hint, the creamier the cheese, the quicker it melts.
