Chipotle Baked Beans

12 ounces bacon, cut crosseise into 1/2 inch pieces
1 cup chopped onions
1 medium green bell pepper, seeded, chopped
3 cloves garlic, minced
2 (16 ounce) baked beans
1 cup Texas on the Plate Chipotle Chile Ketchup
1 1/2 cup shredded Monterey Jack cheese
Preheat oven to 350 degrees.
In skillet cook bacon until crisp.
Using slotted spoon, transfer to paper towels set aside. Discard all but 2 tablespoons drippings.
Add onions and green pepper to drippings in skillet saute until soft (4-5 minutes). Stir in garlic and cook 1 minute longer.
In large mixing bowl combine beans, onion mixture, ketchup, and half of bacon. Transfer beans to 1 1/2 quart baking dish sprayed with no stick cooking spray.
Sprinkle cheese over top and arrange remaining bacon over cheese. Bake 5-8 minutes or until chees is melted.
Makes 6-7 servings.
