Apple Juice Birds
SUBMITTED BY: Rick Browne
4 Cornish game hens
1 teaspoon ground cumin
1 teaspoon pepper
1 teaspoon paprika
2 teaspoon salt
non-stick cooking spray
4 tablespoons honey, raspberry or apricot preserves
4 small cans of apple juice
Turn Crock Pot« BBQ Pit to Low.
Combine the cumin, pepper, paprika, and salt. Spray game hens with cooking spray, then sprinkle each hen with the spice mixture.
Open apple juice cans and slide the rear end of the game hens vertically onto the cans. Cross the legs to form a poultry tripod to keep the birds upright. Carefully place cans with hens into the BBQ Pit keeping them upright.
Cook until the hens reach an internal temperature of 170║F, about 2 - 2 1/2 hours. You do not need to turn, baste or check the birds while they are cooking.
Using an oven mitt and long fork, carefully remove the hens from the BBQ Pit. Separate the hens from the juice cans and split them with poultry shears.
Serve on a bed of the garlic mashed potatoes or wild rice. Drizzle honey or preserves over each 1/2 game hen and then serve.
