Mediteranean Lamb Burgers with Goat Cheese and Tomato Relish SUBMITTED BY: Stephanie Adams
INGREDIENTS 2 lbs. ground lamb 2 shallots, peeled and finely chopped 1 T capers, rinsed and finely chopped 6-8 large basil leaves, julienned 1/4 t fresh ground black pepper salt 1/2 cup cornmeal for coating
Tomato relish 1 t olive oil 3 tomatoes, diced 1 red onion diced 2 cloves garlic, minced 2 t sugar 1 t balsamic vinegar salt and pepper to taste 5-6 kaiser rolls 2-3 T goat cheese
DIRECTIONS To make relish: Heat oil in a saute pan, add onion and garlic, cook for a few minutes, add tomatoes and cook for five minutes more.
Add sugar, vinegar, salt and pepper, cook a couple minutes more then let cool to room temperature.
To make burgers: Combine lamb, shallots,capers,basil and salt and pepper in a large bowl andmix well.
Let stand for an hour or refrigerate longer for better mixing of flavors. Dive mixture into five burgers.
Spread cornmeal over a plate and press burgers into cornmeal to coat each side. Cook burgers over hot grill 5-6 minutes per side or until desired doneness.
Remove to a plate and cover with foil while you toast buns that have been brushed with olive oil.
Assemble the burgers: Spread goat cheese on the bottom bun , top with burger then mound a generous amount of relish on top of each burger.
A light to medium bodied red wine pairs nicely, like a Cotes-du-Rhone.
