INGREDIENTS 6 doves / cornish game hens (in BT's case) 6 sm. onions 6 tbsp. chopped parsley 1/2 c. butter 1 garlic clove, minced 2 1/2 c. canned tomatoes Polenta 1 (6 oz.) can mushrooms 1 lg. onion, chopped 1/2 tsp. thyme 1/4 tsp. dried basil 1 tsp. salt Freshly ground black pepper
DIRECTIONS Stuff each dove with 1 onion, 1 tablespoon parsley and 1 teaspoon butter.
Saute garlic in remaining 6 tablespoons butter for 5 minutes.
Add doves and saute for 10 minutes or until brown on all sides.
Put doves and garlic butter in a deep casserole and add the rest of the ingredients. Cover and bake at 375 degrees for 1 hour or until done.
Serve on a platter with a border of polenta.
Serves 6.
