Oven Roasted Pork Ribs

4 T sweet paprika
2 T chili powder
2 T ground cumin
2 T dark brown sugar
2 T salt
1 T dried oregano
1 T granulated sugar
1 T groung black pepper
1 T ground white pepper
1 t cayanne pepper
Mix all ingredients together.
Rub spice mix liberally onto ribs and let stand for at least an hour meanwhile preheat oven to 300F.
Adjust oven rack to middle position. Place ribs meaty side up on a heavy rack in a rimmed baking sheet and wrap the whole thing with aluminum foil. Cook for 1 hour.
Remove foil then cook for another hour.
Brush with favorite bbq sauce and cook uncovered for another hou to hour and a half.
Remove from oven, completely cover each slab with foil and place in a paper grocery bag, crimp the top and let rest at room temp for 1 hour.
Serve with a fruity style California Zinfandel.
