Thai Lime Beef Salad SUBMITTED BY: Unknown
INGREDIENTS Dressing 3T Thai fish sauce 3T fresh lime juice 1T sugar 3 cloves of garlic, minced 2 Thai chili peppers crushed or minced 1/2 cup fresh mint chopped 1/2 fresh cilantro chopped 1/2 cup chopped scallions
DIRECTIONS Combine all ingredients in a food processor.
Combine baby mixed greens with thinly sliced red onion, cucumber and red bell pepper. Toss with freshly ground black pepper and kosher salt up to two hours before serving. You could also add some carrots and grape tomatoes or whatever you like. Slice and place on top of greens and drizzle with dressing.
Serve with light red or rose' wine well chilled.
