Heirloom Tomato Salad SUBMITTED BY: Cue at the Guthrie
INGREDIENTS 6 oz Heirloom Tomato 3 oz Cucumber 1/5 oz Basil leaves (about a 1/2 cub) 1/2 oz Olive oil 1/4 oz Lemmon juice 1/2 oz Locatelli Pecorino Romano Cheese
DIRECTIONS Remove core from tomato, cut into 4 wedges, then again in half.
Cut ends from cucumber, slice down middle, lengthwise. Cut into 1/3 inch slices.
Remove basil leaves from stem.
Toss tomato, cucumber and basil with olive oil and lemon juice and season to taste with salt and black pepper.
Place salad on center of plate.
Shave Locatelli cheese over Tomato Salad.
