White Wine Poached Shrimp with Tarragon Mayonnaise SUBMITTED BY: Chef Philip Dorwart
INGREDIENTS Shrimp 1 Lb. 13-15 size raw shrimp- peeled and deveined (Louisiana Gulf are great) 3 cups dry white wine, champagne or sake 3 cups water 1 medium yellow onion 1 lemon 2 cloves garlic smashed 2 Tbl pickling spice 3 Tbl kosher salt
DIRECTIONS In a large pot put all ingredients and bring to a simmer, add shrimp and shut off heat, let cook for 4-6 minutes-until done. Strain and plate with tarragon mayonnaise.
INGREDIENTS Tarragon Mayonnaise 1 Cup Hellman’s 1 Tbl. Shallot-minced 1 Tbl. roasted garlic paste 2 Tbl lemon juice 2 Tablespoons fresh tarragon-minced 1 Tbl Cornichon or capers-minced salt and pepper to taste
DIRECTIONS Mix all together and let chill for 1 hour before using.
