Garlic Nailed Steak

INGREDIENTS

1/2 pound of sirloin steak, cut in 1/4 inch slices and trimmed of fat
4t or 1/2 stick of butter
6 cloves of garlic, thinly sliced
1 large onion thinly sliced
1/2 cup white wine
1 t Kosher salt or to taste
1/2 t ground black pepper


DIRECTIONS
Place steak strips on workspace. Lay slices of garlicon the side of steaks. Using a meat tenterizing mallet, "nail the garlicto the steak by pounding the slices into the meat. Repeat on other side of the steaks.

Melt 3 tablespoons butter in a skillet over medium heat. Fry each steak in the butter for barely two to three minutes per side. Transfer to a dish and cover.

Melt remaining butter in the same skillet. Add the onions and saute' until they are golden.

Transfer the onionsto the dish holding the steaks. Pour wine into same skillet. Scrape up brown bits in bottom of pan. Raise temp to medium high and reduce sauce by half.

Return onions and beef to the sauce and heat through for one minute. Serve over crusty rolls, garnish with lettuce and tomato and serve with a salad on the side.
