Irish Potato Pie

Irish Potato Pie

INGREDIENTS
7 potatoes, sliced
6 strips smoked bacon
3 leeks
Sea salt, to taste
Freshly ground black pepper, to taste
1 cup grated Cheddar cheese


DIRECTIONS
Preheat oven to 400F degrees.  Spray a 9-inch pie plate with cooking spray.  Set aside. 
Boil the potatoes slices under fork tender but firm.  Drain and set aside.

In a heavy bottom skillet, fry bacon under crisp.  Drain on paper towels.  Set aside.  Rinse leeks under water to remove sand and dirt.  Dry with a paper towel.  Slice leeks, both white and small amount of green, thinly.  Add leeks the skillet and remaining bacon fat.  Sauté over medium heat until soft. 

Arrange half of the potato slices on the bottom of prepared pie plate.  Season with salt and pepper.  Layer with bacon, leeks and ˝ cup of cheese.  Cover with remaining potatoes and season again with sea salt and pepper.  Sprinkle with remaining cheese. 

Bake for 30 minutes or until top is golden brown and cheese has melted. 

Serves 6-8
