Cole Slaw Dressing

INGREDIENTS
3 Egg yolks
1 tsp Dijon
¼ cup sugar
1 Tbl Flour
¼ tsp cayenne
1 tsp salt
½ cup cider vinegar
½ cup heavy cream


DIRECTIONS
In a stainless bowl mix the yolks, and flour over a double boiler stirring constantly for 30 seconds, stir in cream and cook until thick-about 2 minutes—whisk in the remaining ingredients and chill. This is a base and you can make it sweeter, spicier or whatever you like. Tastes much better than store purchased!

Toss with your favorite type of cabbage-vegetable slaw.
